First Book Review: Ahab’s Wife or, The Star Gazer

I finally wrote my first book review for this blog! I had originally planned to write it on David Cooperfield (otherwise known as the book that took me three months to read – grrr), but I just didn’t have any desire to review it. Sorry.

So, instead I offer up my review of the latest book I read: Ahab’s Wife or, The Star Gazer.

All my reviews will be under the Read page under “Book Reviews.” As long as I don’t encounter another Copperfield, they will continue to be pretty regular.

Ghost Town

Happy Christmas Eve!! I can’t believe it’s already here. Furthermore, I can’t believe I’m working today. It seems that everyone either has the day off or took it off. We get out at 3:00 p.m. and since all we have planned for tonight is an 8 p.m. Christmas Eve mass in Upstate NY and then relaxing with my parents, I didn’t see the point in taking a whole day off and using up my time.

Hence, I’m at work and the place is a ghost town. As was the bus and the subway down here. It’s an eery kind of quiet.

Do you have fun Christmas Eve plans?

I know people whose friends throw Christmas Eve parties, but my group has never really done that – Christmas Eve and Day are pretty much family-time for us. I am looking forward to a party on the 26th though! 🙂

So here’s a quick recap of yesterday’s eats:

Breakfast was a multi-grain English muffin with half peanut butter and banana and half cranberry relish I made the other night. And the remainder of the banana on the side, with a glass of light cranberry juice.

Lunch was leftover quinoa! It tasted even better the next day, I think because it was marinating in soy sauce all night.

My afternoon snacks were blueberry Greek yogurt with granola.

And a few chocolates. The first chocolate I chose had a cherry filling that I just didn’t like. I’m not a big chocolate and fruit person – are you? So I had to go back in for a different one…and then I may have had one more (unphotographed).

I had a bit of headache toward the end of the day, so I didn’t end up hitting the gym after work. Instead, I came home, made dinner and we watched a movie and then I sort of packed.

Dinner was grilled cheese with apple and a glass of wine. I was jealous that so many other people were already on vacay and I wanted to feel like I was too – hence the wine.

What do you like to add to your grilled cheese (if you eat it)? I’m also a fan of adding tomatoes, not with apple though.

After dinner, Hubby and I watched Revolutionary Road and had mixed reactions. I didn’t love it, but didn’t hate it either. I thought it was an interesting view of suburban married life and I thought Kate Winslet and Leonardo DiCaprio gave wonderful performances. It was a little dark at times, but that didn’t bother me. Hubby thought it was very slow and boring. We agreed to disagree on it. 🙂

Then I read my book for a bit and went to bed. This book, Ahab’s Wife, really has me hooked. Every few chapters I keep being utterly surprised by what happens in the main character’s (Una) life and how she copes with it. There have been a few moments that have caught me off guard with the amount of crudeness discussed or displayed, but the way it’s written allows me to digest it, accept it and move on. In this respect, the book reminds me a bit of John Irving’s style of writing where the absurd is never shocking and the shocking is never absurd.

I also think it’s got to be hard for writers to convey the “shock factor” in a novel. In movies, the visual aspect is key in getting this across, but in books, less is sometimes almost more, as it allows the reader’s mind to fill in the gaps.

Anyway – enough book rambling.  I’m really excited to head upstate tonight after work and see my family. The Murph is coming with us in the car – that’s always interesting. When he was a kitten he loved the car, but as he’s gotten older he seems to have developed car/motion sickness. So we have to keep him in his little carrier and not let him look out the window.

Freezing, Frigid, Friday

Holy moly it’s cold outside! I left the house this morning and the temperature gauge was reading a chilly 23 degrees. Yikes. And I couldn’t find my hat, so it was not a very pleasant commute.

I also stepped out the door and found myself walking onto a t.v. set pretty much. There were Gossip Girl trailers everywhere! I didn’t have my point and shoot camera on me (left it at work), so I asked Hubby if he wouldn’t mind taking some shots before he left for work. I also saw the t.v. studio’s “snack caravan” set up just up the street. Must be nice!

As far as my snacks go, here are yesterday’s eats:

Breakfast was rather boring – Kashi Heart to Heart cereal with Almond Milk. Yes, you read that right, I gave almond milk a whirl and have to say that I really liked it. I used it again today and it was so good. I’m not vegan or opposed to drinking cow’s milk, I would just like to cut back my dairy intake wherever I can. I don’t think it’s entirely necessary and my stomach tends to feel better with less of it.

What kind of “milk” drinker are you? Dairy, soy, rice, almond?

I’ve been eating Heart to Heart for a while. But after visiting Tina’s new NuVal blog and exploring the “Trading Up” section, I might try the Kashi 7 Whole Grain Cereal Puffs. It received such a high NuVal score!

Lunch yesterday was some Reduced Fat Triscuits, Laughing Cow Light Original Swiss Flavor cheese and carrots.

And my afternoon snacks were supposed to be Greek yogurt, a few Rice Works chips and two clementines. But it ended up that I ate two helpings of the chippers and then didn’t want the clementines later. Oops.

I came across this NY Times article yesterday and found it pretty interesting: 

Ready to Exercise? Check Your Watch

It talks about how the different times you workout (morning vs. evening) can affect how “good” your workout is. I always feel like I’m stronger and faster in the evening, which apparently is the norm for many people. Although I do also feel very proud after completing a morning workout – not so much because it was fast or hard, but just because I actually got through it!

When do you feel at your best as far as running or working out goes?

After work I had an appointment to go to, so I ended up skipping the gym. This week hasn’t been as great as I wanted as far as running and the gym are concerned, but I’m slowly getting back into it.

The past few days have been filled with lots of grains, so I was really craving some veggies for dinner. Bill was at a work happy hour, so I was solo. I made myself a nice big salad with romaine lettuce, asparagus shavings, cucumbers, grape tomatoes and goat cheese. 🙂 And I had some leftover couscous on the side.

I actually stopped and got cranberries to make the cranberry dessert, but then lost motivation and had this instead.

I might have had it times two actually.

I’m ashamed to say that I also watched a bit of Jersey Shore last night as well. It’s just so God awful that I couldn’t turn away. Thankfully, I got sidetracked and eventually moved on, but I’ve heard from a bunch of people that they find themselves watching in horror as well.

I was toying around with my Rebel camera settings a little later and caught this picture of Murphy with a  litter nose.

I read a little bit of my new book Ahab’s Wife and am getting into it. It’s historical fiction, which I typically really enjoy (like The Other Boleyn Girl). So far the main character “Una” has been through a lot and has grown up tremendously. You start out with her as an adult, married to Captain Ahab (yes, the one from Moby Dick) and she is giving birth to his child, and then the story flashes back to her childhood and we learn where she came from and how she ended up with Ahab. At least that’s where I’m assuming it’s going. Right now she’s only 16 years old at the point I’m at.

I swear, I’m going to write my David Copperfield review this weekend! I’m looking forward to tonight – Happy Hour with Rachael – and then a weekend of relaxation and running. Hope I don’t freeze!

Movie Date Debate

It’s Thursday, which means tomorrow is FRIDAY!! Yipee! I am looking forward to a low-key weekend, hopefully with some good running involved.

So last night Hubby and I had a movie date night. We are Netflix members (best decision ever), but we had just returned two movies, so we checked our “online queue” where you can just download them straight from your t.v. There were a few on there to choose from. I really wanted to watch Food, Inc., but Hubby said I need to watch that one when he’s not around. No fun.

So we ended up going with “Before the Devil Knows You’re Dead.” I had never heard of it before, but it had some big-name actors: Philip Seymour Hoffman, Ethan Hawke and Marissa Tomei.

The premise of this movie and the characters’ actions ended up really affecting me. I was almost in tears and was feeling very stressed and anxious throughout the whole thing. Hubby hates watching movies with me because I constantly ask questions and make comments. I really try not to do it, but most times I don’t even realize I’m talking. And during this movie I was particularly out of control.

At the end, I turned to Hubby and said I really disliked the movie and thought it was awful. He then claimed that if a movie could get me so riled up and upset, then shouldn’t we classify it as good because it did its job. So that is our movie date debate.

Even if you dislike a movie’s premise, turn of events and general feel, if it affects you emotionally, would you then classify it as good?

In this case, I do not. I would NEVER want to see that movie again and don’t even particularly like thinking about it. Maybe to some that makes it good, but to me, it will always be a “bad movie” in my book.

Sorry for that little tangent. Here are yesterday’s eats. Breakfast was a multi-grain hot cereal with flaxseed and soy. It was on sale at the store, so I gave it a try. I added raisin and agave.

It was just okay. Nothing to write home about. I’ll use it all up though and then try something else.

Lunch yesterday was leftovers from the previous night’s dinner. I ate it cold and it was actually quite good.

Wow – I really hate florescent lights. This looks just awful.

Afternoon snacks were initially going to include just Chobani Pineapple yogurt with granola and two clementines. But then the 4:00 hunger monster struck and I ate some trail mix that I had leftover from my L.A. trip.

After work I hit the gym for a quick workout. I was feeling really tired (perhaps b/c our office was an inferno today and the heat really got to me).

Does your office have a temperature problem like mine? It’s either frigid or sweltering, no in between.

I felt very weak at the gym today, so I did the following.

3.1 miles in 27 minutes
85 crunches
20 leg lowers (abs)
15 squats
15 lunges

And yes, I need to do some arm stuff. But I was just so worn out.

I stopped at the store on my way home, with the intention of buying some cranberries to make a little dessert I read about on another blog. Well, when I got home, I realized I had bought a bunch of stuff, but completely forgot the cranberries.

For dinner I made some quick curry couscous and added in some chopped up vegetarian “sausage.” Doesn’t look spectacular, but I was happy. Hubby went his own way for dinner last night since he “needed meat.”

Afterwards I wanted something sweet. The cranberry light dessert was what I had planned, but that was obviously not an option. So I made this little concoction.

Warm Apple Mush

  • 1 apple chopped (with skin on)
  • 1/2 cup of water
  • 1 packet of truvia
  • 1 tsp of agave nectar
  • 1 tsp of cinnamon
  • handful of granola

Directions

Place chopped apple in a microwave safe bowl with water. Microwave on high for 1 minute – remove and smush some of the apple. Microwave on high again for 1 minute. Remove and smush apples again as desired. Add all the other ingredients and mix.

It was sooo good! Just what I wanted. It’s almost like applesauce, but not as smooth. It was the right amount of sweet and tart.

Just before we started our movie I browsed my new issue of Runner’s World. I was excited to see a “Marathon Guide” in the issue and was even more pumped to see two of the marathons I was considering ranked as “the fastest” courses. The Wineglass Marathon and the Bay State Marathon were featured and they are both races that Runnerbelle suggested previously as well!

After the movie I read a bit and headed to bed. My new book is very good. I’ll try to post a David Copperfield recap soon and will talk about my new book more tomorrow.

P.S. – Hubby texted me to tell me they are filming Gossip Girl on our street and actually right in front of our building! I saw them coning it off when I left this morning, but had no clue for what. I don’t watch the show, but still think it’s pretty cool our building might make a special appearance.

West Coast Bound

I’m going going, out to Cali, Cali. It’s Wednesday morning and I’m heading out West! To Los Angeles, California to be exact. I’m headed there for training for work, so nothing too exciting – but a trip to Cali just the same.

Right now I’m on the plane and am pumped because we’re flying Virgin America and it has a free Google-sponsored Wi-Fi deal for passengers until January 15, 2010! Nice. Our flight left at 7:30 a.m. (EST) and I am pretty darn tired. I had a giant coffee this morning before the flight because I really don’t want to sleep much on the place since we’ve got a busy day ahead of us. I’m hoping I will be able to post at least once or twice while I’m there.

Let me do a quick recap of yesterday’s eats. For breakfast I went a little crazy and threw some chocolate into my oatmeal. This looks disgusting, but it was good. 1/2 cup of oats, tsp of peanut butter, 1 banana and a few semi-sweet all natural chocolate chips. Once mixed, it looks G-ross.

Next time I’ll take a pre-mixed pic.

For lunch I was boring and had leftovers from Monday night’s dinner, minus the pasta. It tasted pretty decent on day two though. I also had some strawberry Greek yogurt with granola and oats.

Later in the afternoon, as I wrapped up all my work in preparation for the trip, I snacked on two clementines. Still rocking the vitamin c, although I feel pretty much 100% better and think I was just suffering from allergies on Sunday night.


After work I headed home to finish up packing and prepping and spend some time with the hubby. I seriously feel like lately we are just ships passing in the night- we only ever seem to have a day or two together before one of us is off to somewhere else. And last night wasn’t very much quality time since I was packing and wrapping things up and then I went to bed early. Sorry Bill – we’ll get to spend some QT together soon!

How do you stay connected with your significant other when schedules gets hectic and time is tight?

For dinner I wanted something really quick and nothing is quicker than rice and beans. Wild rice, black beans and a few grape tomatoes.

But I also needed some chocolate to ease my traveling nerves – of course!

And now I’m headed across the country to see what Cali has in store. We are staying in Beverly Hills (how posh right?), but we won’t have too much time to explore. We’ll be in training from 8:30 am to 5:30 pm on Thursday and Friday and then I am taking the red-eye back to NY on Friday night. It’s going to be exhausting.

I think we’re headed to a pretty nice lunch this afternoon, so I will be sure to take some pics and hopefully post a daily recap tomorrow at some point. Added bonus, the weather report for the next few days in Cali says between 65-70 degrees – I will certainly take it!!

I think this college is taking things a bit too far, What do you think? It’s great to “encourage” living healthy, but you can’t mandate it. People have the right to eat and live as they please.

I’m signing off and either attacking my new book or watching some free movies. Yup – you read right – I FINISHED David Copperfield finally!! The next book on my list, and with me on the plane, is Ahab’s Wife. Anyone read it? I’ll do a Copperfield review in the near future, but I warn you, it may not be too exciting.

Happy Thanksgiving and Some News!

Happy Thanksgiving everyone! I can’t believe it’s already here. I’m writing this post bright and early before my race (the Turkey Trot) at 9:30 a.m. I’m actually a little nervous. I haven’t run a 5k race in a long time. I’m hoping I can work up enough speed – I’m so used to longer runs now. Wish me luck!

I’ll get into my eats from yesterday in a minute, but first I just want to share some fun news. I recently started writing for Examiner.com as the NY Health and Happiness Examiner! I’m pretty pumped about this new prospect.

Those of you who know me, know that in my former life I was an aspiring journalist and freelance writer. But sadly, journalism wasn’t exactly paying the bills, if you know what I mean. Seriously, it’s the most difficult profession to get into and the most underpaid.

Anyway – I learned about Examiner.com and liked that I could write about what I wanted and do so within my timeframe. As of right now, I have two articles posted, but am sure I’ll be churning out some more soon. Feel free to check out my page and articles:

So now back to the blog. My eats yesterday began with a breakfast of oatmeal, 1 tsp. of pumpkin butter, 1 tsp. of peanut butter and a handful of raisins.

Lunch was eaten early because I was soo hunnggry! I usually wait till about 1:00, but 12:30 hit and I lunged for my food. Reduced fat triscuits, Laughing Cow Original Flavor Light Swiss Cheese, and some carrots.

Our office closed yesterday at 3:00 for the holiday, so I ate my afternoon snack right before I left. I had Greek yogurt with Flax Plus Granola and oats mixed in.

After our “early dismissal” I headed to Penn Station (the bain of my existence – hate it soo much) and waited eagerly for my train. As I expected, it was PACKED with holiday travellers and worse – an HOUR late! I found a seat, settled in and proceeded to read David Copperfield for a while.  I am happy to say I really and truly am almost done!!

I was raveous after my trip and was thrilled to see that Momma B (that’s my mom’s nickname) had a nice little dinner all ready for me.

I am getting this recipe – it was delicious. Pasta, chicken, grape tomatoes, chicken broth, artichoke, roasted red peppers. I gobbled (giggle) it up and then had some banana pudding that my mom “had made too much of.” Yeah right. I ended up only eating about 2/3 of this.

Then I set to work making some homemade apple sauce for today! YUM.

I drank water throughout the night in preparation for the race today. Although it’s a very short race, I’m a big believer in proper hydration! Then I went to bed super early because I was exhausted. 🙂

Oh and here’s a picture of my big bully kitty attacking one of my parent’s cats. Murphy is the mean looking tabby about to attack. They look vicious, but they never actually hurt each other. It’s apparently how they “play.”

And now it’s almost  race time and then lots of good eating with the Callahans!  Have a great Thanksgiving everyone!

Poor Planning, Poor Me

Happy Friday – Finally!! To be honest, this week went by pretty fast for me. Except now today is dragging. But first, my Thursday night recap.

When I left you in my Thursday afternoon post, I was getting pumped up to go running with my co-worker after work. Alas, it did not happen – sadness. The skies were threatening rain and she didn’t seem too eager about the idea in general, so we postponed.

That can mean only one thing – a date with the dreaded treadmill. Boo. But I survived. On Wednesday night I actually forgot my iPod and had to run sans music. Thank goodness for TVs with closed captioning. Last night I remembered my iPod – so I was golden. My workout:

4 miles on the treadmill in 35:05
1/2 mile cool down
85 crunches
15 leg lowers
stretching

Then I headed home and threw in a load of wash and made some dinner – by which I mean I reheated my leftovers from the night before. I LOVE leftovers! And I added a pinch more curry to the dish – yum.

Do you plan ahead and make extra food so you’ll have leftovers or are you not a leftovers fan?

And then I needed some dessert. I threw together a glob of plain Chobani Greek yogurt, dollop of peanut butter, a little granola and crumbled up the remaining two pieces of chocolate from the night before to make this mess:

It was yummy!

Then I packed for my trip upstate this weekend and watched Grey’s Anatomy. Was anyone else thrown by the jump from Thanksgiving to Christmas in a span of 5 minutes?! All of a sudden Mark’s daughter had been living there a month and there’s a Christmas tree? What?

Again, I got to bed later than I wanted, but made some progress on David Copperfield – I’ve surpassed page 600! My “To Read” List is soo long, I really need Copperfield to end soon. But I will admit, the story has gotten a little more captivating.

I woke up this morning in a flurry to gather all my odds and ends for my trip and made a lazy breakfast of Kashi Cereal with blueberries and skim milk.

I got to work, realized I forgot my ID card to get in, and decided that I was going to need some coffee. So my morning snack was coffee and a granola bar.

At my office, it’s kind of a hassle to enter the building if you don’t have your ID card. You pretty much feel like a criminal. You have to wait to be “escorted” up by another employee. I didn’t really bring much food with me today because of all the other junk I had with me, so lunch became a desperate situation. And I didn’t want to leave the building and have to go through the whole “escorting” thing all over again.

This is what I managed for lunch (forgive me). Some Progresso’s Chicken and Wild Rice soup that was in my food drawer (yes, holy MSG, but desperate times people…), Chobani peach yogurt with oats, and a few Rice chippers.

So the soup is really the only less-than-good food on my lunch list, but it was just such a disappointment. I used to eat these cans of soup for lunch ALL THE TIME, but since trying to eat “cleaner” and cut out unnecessary chemicals, I’ve been avoiding them. Oh well.

And lord help me, but my only snack for the afternoon is a banana (no pic).

I’m a little scared to see how ravenous I’ll be by the time I get to Albany at 7pm. Or to see if I can hold off buying something terrible at the train station. I’m out of here at 3:30!!

Dinner tonight will be with my good friends Stephanie and Rachael at my uncle and cousin’s restaurant Beff’s. They have the best nachos in the world… my restraint will be tested – I make no promises.

To Eat Meat or Not to Eat Meat…

Happy Tuesday! But first let me recap my Monday night. I had my dinner last night at the office before heading to the book reading. Dinner was leftover rice and beans.

Event: Eating Animals Book Reading at Barnes & Noble
Last night, I went with my co-worker and one of her friends to this book reading in Union Square. I have to say, the author Jonathan Safran Foer was extremely articulate, engaging and passionate. It was one of the best readings I’ve gone to so far.

I was a little nervous that the reading/discussion would be all about the slaughterhouses and cruelty. I was relieved when Foer specifically veered away from the area. Instead, he talked a lot about how the meat industry is a very closed-off and untouchable business. He said the most disturbing thing he encountered during his research was that we buy these meat products, ingest them, give them to our children, and yet we have no idea how they are made and can’t find out if we tried.

Foer wrote to Dyson and other meat producers and asked for admittance to their factories and he never so much as received a response. It’s really scary to think that we are eating this food and we have no idea what’s in it! He talked about the fact that the meat industry actually makes more money by producing “sick” animals – animals injected with antibiotics and hormones. And then we eat these animals and everything in their bodies.

He actually really didn’t focus on the “humanitarian” ideals that lead many people to become vegetarians – not wanting to hurt/kill animals. According Foer, that’s not the question we should be asking at this point. The meat industry and its issues were more prominent focuses by far. And he brought up the thing the gets me most – how these antibiotics and chemicals are being ingested and affecting humans in so many ways: girls going through puberty at an earlier age, increase in issues with pregnancies (miscarriages), and much more.

I left right after the discussion and apparently missed out on seeing Natalie Portman! She was in the front row. Oh well – maybe at the next book reading I’ll run into her.

Sorry for the long recap, but this event really got me thinking. What do you think? Do you eat meat, and if so, does the lack of transparency in the meat industry scare you? Would you or have you considered going vegetarian? Do you buy local non-factory-farmed, grass-fed meat – where?

After the reading I headed home and was still a little hungry despite my earlier dinner. I snacked on some popcorn (with a little Parmesan cheese sprinkled on top) and a few raisins (no pic).

Then I headed off to read some more Copperfield before bed (I broke 500 pgs!).

Breakfast this morning was just what I was craving: a multi-grain English muffin with peanut butter and banana. Yum!

I set my alarm for 5:15 a.m. because I was going to get up and do some pilates and that never happened. I am definitely not a morning person. Bill always laughs at me when I do this, but it’s frustrating.

What are your tricks or tips for actually getting up in the morning to work out?

Lunch today was a mix: a workout cookie (I know – I didn’t workout today!) and Greek yogurt with oats.

Tonight a few local bloggers are getting together for a nice little dinner at a place in my neighborhood that I’ve wanted to try. Can’t wait!

A Great Weekend to Run

It’s Sunday and I didn’t get any  blogging in yesterday. But I did get something else in… a nice run!! I woke up to a light drizzle yesterday, but checked weather.com and it said no “real” rain was in the forecast until later on. Ever since marathon-training, I’m an eat-before-I-run-runner, so I had a multi-grain English muffin with peanut butter and banana before I headed out.

Then I went for my much-needed run. I did probably around 5 miles on the East River Esplanade. I tried to figure out the exact distance on mapmyrun, but the site doesn’t show the esplanade, so it’s hard to estimate. That’s why I really want a Garmin!! I ran what I guess to be 5 miles in 46 minutes, not my fastest, but not my slowest. Then I did some stretching afterwards.

About an hour later I was hungry again, so I had some Greek yogurt with Flax Plus Granola.

The rest of my afternoon consisted of two loads of laundry, a little boob tube and this (yes, I’m STILL reading it):

And I may have napped for 3o minutes by accident. Oh well! Then it was time to eat some food and get ready for my friend Alexondra’s apartment-warming party on the West Side. For dinner I finished up the lettuce and some veggies and fruit in the fridge: lettuce, cheddar cheese, apple, grape tomatoes, cucumber, walnuts, raisins – balsamic vinegar on top.

I’m a bad blogger – I forgot to bring my camera with me to the party! But I can tell you that her apartment is gorgeous – what a great find. And there was some tasty homemade humus which I nibbled on, along with a glass of red wine and 2 beers. Then I called it a night. I knew I wanted to get up and try to run again today.

Today’s weather was even better for a run! Again, I had some breakfast first: oatmeal with pumpkin butter, flax seed and blueberries.

Then I set out for Central Park – it was 60 degrees outside! It’s 1 mile from our apartment to Central Park, so that serves as my warm-up and cool down. If I hit the lights right I can fly there non-stop, which happened this morning and helped set my pace. Here are my times:

1 mile warm-up there: 9:13
6.1 mile CP Loop: 51:30
1 mile cool down home: 8:30

I calculated my average mile time for the loop and I was averaging an 8:26 minute mile! That’s almost exactly where I need to be to qualify for Boston. However, I felt like I was pushing it and was pretty tired after the loop, so I don’t know if I’d be able to sustain that speed for 26.2 miles. It’s something to work on.

I also feel like I tend to run faster in Central Park because there are soo many runners and I’m the kind of runner that doesn’t like to be behind people or too close to other runners, so it seems like I’m constantly focusing on passing the next runner.

Do you have certain running routes that push you to run faster or harder than others? What helps you increase your speed?

After my fantastic run I came home, stretched, showered and had a snack. Chobani Greek peach yogurt with more blueberries, apple, and Flax Plus Granola with Pumpkin. The pumpkin bread is finally gone – sadness!

Now it’s time for the not fun part of my weekend…CLEANING. Our apartment needs a really good once over. So that is my plan for the remainder of the day. I’m thinking dinner tonight will have to be quick and easy, because I’ll probably be exhausted. Have a nice Sunday!

Dinner on the Fly, Biggest Loser Makes Me Cry

Well, unfortunately my tentative plan to run outside with the hubby last night did not come to fruition. He’s been very stressed and busy with work lately and he ended up having to work later than he thought. So I was forced to hit the gym and treadmill after work. My workout consisted of:

4 miles. increasing speed from 6.3 to 7.2 (averaging a 9 min mile)
100 crunches
25 alternating leg lowers (for abs)
Extensive stretching

Check out this article in the NY Times about running in tough weather: Train the Mind to Run Right Through Winter. I don’t mind a little rain or snow, it’s the absence of light that holds me back. I think NYC is a pretty safe place, but I don’t like to test the limits more than necessary.  

When I got home from the gym I began throwing together dinner. I wasn’t working from a recipe or anything, but it ended up turning out delicious! Here is my make-shift recipe for it:

Tomato and Goat Cheese Stuffed Balsamic Chicken

Ingredients
2 chicken breasts
1/2 cup balsamic vinegar
10-12 grape tomatoes halved
1/4 cup chopped onion
1 tablespoon of lemon juice
2 tablespoons of goat cheese
salt and pepper to taste
sprinkle of Asiago cheese

Preparation
In a small bowl or measuring cup combine the balsamic vinegar, chopped onion and grape tomatoes. Set to the side. 

Slice a pocket into each chicken breast starting in the thickest area of the breast. Fill the pocket with as much of the tomato, balsamic and onion mixture as will fit. Then insert 1 tablespoon of goat cheese into the pocket as well, spreading it out as much as possible.

Place the filled chicken breasts in greased baking pan. Drizzle lemon and balsamic vinegar over the top, salt and pepper lightly, and sprinkle a dash of Asiago cheese. Cook in the oven at 375 for 20-25 minutes. Remove and drizzle the remaining balsamic vinegar, onion and tomato mixture overtop. Serve over lettuce or rice. Here’s what it looked like:

The rest of my night consisted of watching The Biggest Loser and getting emotional (why do I always end up crying?!), and then reading David Copperfield for a bit (I’m 440 pages in – moving slowly but surely).

I have to say, I didn’t really want Shay to leave BL yet. And did I miss her “big reveal”? I only saw Daniel’s. My bet is that they are going to have her on again next season – just like they did with Daniel. I’ve never watched the show before this season, but for some reason I got hooked this time around. I think the transformations are amazing. I’d like Jillian to come train me for a day or two.

I got to bed later than I wanted, but had a very good night’s sleep (no kitty waking me up at 5 am!)

Breakfast this morning was a multi-grain English muffin topped with peanut butter and banana. I got a little eager and started eating it before I took a picture – notice the big chomp taken out:

Today’s lunch is a repeat of yesterday’s leftovers. Why did I have so many leftovers you may wonder? Well, the hubby took one look at the Quinoa dinner I was preparing on Monday night and promptly decided he would not eat it. He went out and got two slices of pizza for himself instead. Hence, I ended up with more leftovers than anticipated. Note to self: for the time-being, only make Quinoa dinners when Bill is not home for dinner. Hopefully he’ll come around later.

It looks like I’ll be hitting the treadmill again tonight to up my mileage for Pile on the Miles. I’m praying this weekend is nice so I can do a nice long run in Central Park.
